Description
Fungal amylase is derived from a controlled fermentation of a selected strain of Aspergillus Oryzae . Fungal amylase hydrolyzes starch into maltotriose,dextrose. The enzyme is capable of rapidly hydrolyzing the interior (¦Á-1,4 glucosidic) linkages of gelatinous starch, amylose, and amylopectin solutions yielding soluble dextrins with small quantities of glucose and maltose which is more showing endo type.
